0000218: Vermin meat/organs can be obtained from embark/caravan
I put in about 50 Rat Meat from the Embark screen. Once I embarked, however, I could only find a group of Rat Remains.

May be worth noting that insect brains do not turn into remains upon embark, so you can have lots of delicious prepared ant brains.

A recently created adventurer started with a stack of 5 prepared large roach brains. This seems wrong somehow...

FWIW, I just embarked with worm meat and prepared blue jay brains and the like, none of it turned into remains according to the kitchen screen.

They're usable, but I still doubt that being able to get barrels of bug brains is an intended behavior.

My guess is that worldgen entities aren't respecting the [NOT_BUTCHERABLE] tag on small vermin. Player-controlled dwarves and adventurers aren't able to dissect the brain from an ant corpse, which is pretty reasonable. The problem seems to be that non-player controlled civs ARE able to do so.

I've seen various stuff that you can't normally get. I typically bring some cave fish leather, for instance. However, this issue becomes more than an oddity if dwarven food preferences can target these food items, although I haven't noted any case of that happening.

These appear to be mistaken or non-functionally intentional since from the butcher's shop, captured adult creepy crawler vermin have enough muscle to render precisely 1 meat from them using the "Extract from a dead animal" job order which ironically uses only living vermin. (amongst harvesting extracts from spiders/fire snakes using vials)

A [NOT_BUTCHERABLE] rat's brain is too small to process even though dwarves may at a stretch, eat a entire rat as a object when starving.
